Guest Post!!


Hi to all Jade's blog readers, I'm Jade's twin sister, Simone. She's been begging me to do a guest post, so here it is ;)

After we had an abundence of lemons, that might've been 'borrowed' from someone's garden. I decided to make something lemony.

Trawled through the internet for a couple minutes and Citrus passionfruit delicious pudding
caught my eye! Nice, light and summery.

Ingredient roll call:



First you cream the butter and the sugar:




(try not to eat it all)

Add the egg yolks one at a time:







Then the lemon juice, lemon rind and passionfruit:







Lastly pour in the milk:





Using another bowl and clean blades, beat eggwhites until soft peaks form:




Incorporate egg mixture into passionfruit mixture





Now it's water bath time! Place pudding dish into a baking tray and fill the tray with boiling water halfway up the sides of the dish:





Bake in the oven at 180 degrees or untill lightly browned on top





And serve. I had mine with vanilla yoghurt.





Really nice desert that doesn't leave you in a food coma.

Recipe

Ingredients (serves 4)

60g butter, softened
3/4 cup caster sugar
2 eggs, separated
1 large lemon, rind finely grated, juiced
2 tablespoons passionfruit pulp
1 cup milk
1/4 cup plain flour
pure icing sugar, to serve
Method

Preheat oven to 180°C. Grease a 5cm deep, 15cm x 23cm (base), 6-cup capacity baking dish. Using an electric mixer, cream butter and sugar in a bowl until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition.

Stir in lemon rind, 1/4 cup lemon juice, passionfruit and milk. Sift flour over mixture and stir until combined.

Using clean blades, beat eggwhites in a bowl until soft peaks form. Fold into passionfruit mixture until just combined.

Pour batter into baking dish. Place dish in a baking pan. Pour boiling water into pan so it comes halfway up sides of dish. Bake, uncovered, for 45 minutes or until pudding is just firm on top and light golden.

Remove dish from baking pan and stand for 5 minutes. Dust pudding with icing sugar and serve.

Dinner at the Burger Bistro

My friend Matilda went to The Burger Bistro for dinner a few nights ago. We walk past it every night and had been meaning to go for so long.

I started off with a nice cider..






And I had a Beef Spice Trail which was an Angus beef patty on a sourdough bun with chilli flakes and a chilli jam! Very spicy indeed!! My boss Donna had had the chicken version earlier in the day and had got DOUBLE CHILLI!




Chips were $2.80 with the burger. After I stopped raving on about how spicy it was actually quite tasty :)

Breakfast at Cranked

It was a solo breakfast .. All my friends seem to be heading overseas or interstate :(

I went to Cranked in Leederville.. Lovely place to sit and chill. Very popular with cyclists too!




I had the Tasty Fungus.. And my usual mocha :) although I found the mushrooms to be a little bland and then to be served with spinach and bocconcini (also bland) I have definitely had better!












Afterwards I took a little drive to scarborough beach as it was a lovely spring day.

Milk'd North Perth

Sunday morning I caught up with my long lost friends, Jesse and Paul. The times we can actually catch up are few and far between, so when we do we make the most of it!

We had a big day of shopping planned so we started with breakfast at Milk'd I had heard about Milk'd from my housemate and thought we should try it.

I started off with my obligatory mocha





I also had The Bacon Stack




Two poached eggs, with tomato rocket and bacon. I also had mushrooms on the side, which I didn't think was worth $4 extra! The breakfast was otherwise delicious and well priced

Breakfast at Zing

Saturday morning I had breakfast with my friends Renae & Maree. After much deliberation we decided to go to Zing in Hilarys Boat Harbour. It was a surprisingly sunny Saturday and the views of Sorrento Quay were beautiful. I wish I'd taken more pictures but we were starving!










I ordered my usual mocha




And we all ordered Eggs Benedict! Delish! The eggs were cooked perfectly. It came with spinach and bacon and the sprinkle of paprika gave it a little extra zing!!

Gnocchi

I have been working up the courage for a while to try my hand at making my own gnocchi.. It is one of my favorite things to order when I'm out and is always better when fresh!
I did quite a lot of research and finding out all the horror stories and all the potential ways to make a complete mess of it. One lady had dropped a few of her potato dumplings into a pot of boiling water and instead of them rising to the surface they completely disintegrated! All that work for nothing!

I took advice from a few recipes and although a few types of potato are better (russet or deiree) due to their more floury texture the potatoes from my local supermarket were just "loose potatoes" so I just crossed my fingers and hoped for the best!!

I started by cutting the potatoes in half a placing them in a pot of cold water then letting the come to a boil. The potatoes took about 45 minutes to cook.

I then took them out and peeled off the skin with a knife. It's much easier to do this if the potatoes are still warm so work quickly.






The next step is to mash them up. Some people use a potato ricer, others use a potato masher and mash them in the pot. I used a fork and mashed them up that way.



I drizzled on a beaten egg and about 3/4 cup of plain flour.

Which made it into this. Then I did a bit of haphazard kneading which made the consistency much smoother. Add flour until the dough stops being sticky.
Once I thought it was okay I cut it up into about nine pieces and then rolled them into snakes. I don't have any pictures of this stage as my hands (and the kitchen) were covered in potato and flour.

I then chopped them up into about 1.5cm pieces and layer them on a floured tray.



The thing I found hardest was the stickiness of the dough and I had to add at least another 1/4 cup of flour.

Then I dropped a few in some boiling water (I just reused the potato water) as the anticipation to see what they would taste like was too great to wait til dinner time.




Leave them float on the top for about ten seconds before you get them out. I dropped them straight into a swirl of basil pesto from a jar.



They were like clouds! Like heaven!! I was shocked that I had made such a good batch on my first try!

Then for dinner I cooked up some sliced mushrooms with chili bacon and garlic. Then added some cream. Then once some water had boiled I added about twenty pieces of gnocchi and once they rose to the surface I ploped them into the sauce.


Delicious!!!!!! I had quite a lot left over so I froze it in two twenty piece lots. They apparently freeze well and thaw quickly.
